Is there a way to change the email address to which these types of scenario errors are sent. So say you have a make account with a certain email address and build your workflows there, that only the error emails are sent to a different address?

Either you can watch error emails from your Make account and forward them to a newly created email address. Other wise you can add a new email address to your organization as a team member and enable error notifications for that new team.
