How can I extract handwritten text from a PDF, I need to capture the name and dob into google sheets, to rename the PDF

Hello!
I have thousands of PDF files i need to rename. I need to capture the persons name and DOB, in 2 fields. The pdfs are named for example “000001.pdf” I need to capture the handwriting and rename the pdf “Bloggs Joe 01-01-1987” for example.

If anyone could help i would be forever grateful.
