As noted on the Make Status website, the us1.make.com server is experiencing the most issues. Could I switch my account to the eu1.make.com server, as it appears to be much more reliable?

As far as I know, it is not possible to switch region of an account after creation. I image it would be technically consuming to do. After all, dependencies and webhooks, mailhooks, IP’s etc are all different.
It might help you to contact Make support to ask them, but prepare for a ‘no’.
