Hi - new to Make and not much coding experience. Trying to get orders from Shopify site which have different variables (size, colour etc) be sent to Google Sheet workflow for manufacture. All I can get is the info default size and colour (first variant) sent into the sheet. Everything else working, very frustrating. Any advice would be very much appreciated.

Welcome to the community. I don’t use Shopify (I use WooCommerce), but I’m sure the rationale is the same. Without being able to view scenario details, when requesting the details of an order, details come in an array & collection that will have the order details according to the number of products in it.
Check out the Shopify templates; there are several that do what you need.
