As kudracha pointed out, some screenshots would be super handy, but just off the top of my head something worth checking is if you have edited the following module prior to implementing the Google Sheets module.
If you have edited the module before adding the Google Sheets module then the prior fields sometimes do not appear and you will either need to save the changes to the module you are now editing or cancel it in order for the new mappable fields to pull through. This is often noticeable if your module has an asterisk attached to as seen in my attachment.

Sometimes this can also just be a browser caching issue. You may try saving your work, then hold down Shift while refreshing the page and check if that resolves your issue.
Otherwise, if you could add some screenshots of your issue (hide any sensitive data), that might help give us a better idea of what’s going on.
Thanks guys, I think I’ve cracked it. it fails when I select ‘run this module only’, but works when I run the scenario from start to finish. A little irritating but it’s up and running now
What is your trigger module? Polling trigger modules, depending on how they are configured, won’t return anything when you run once unless you’ve actually done something that the trigger will see when it fires off.
For example, with Google Sheets Watch New Rows, Run Once won’t return anything unless you’ve actually added a row before running once.
Do you have a screenshot or something of your overall flow?
You cannot individually run a single module if you don’t have example values of the “Data” for each variable, which you must input into the prompt when you manually run a single module.
Try running the full scenario instead by clicking the “Run Once” button:
