I am able to connect Google Sheets and then generate an email with each new row that is added; however, is it possible to batch all new rows daily and basically send one email that includes all of the rows data?

Yes, all you need to do is to set your “Watch New Rows” scenario to only run once per day/daily,
Then, you can Text Aggregate all the bundles from the “Watch New Rows” module to combine them into a single variable that you can include in your email.
Make sure you set a high bundle limit here so that ALL the new rows can be fetched and processed at the same time.
