We are looking at using Make at company level for my current company. I will need confirmation that my data is never stocked or accessed by Make if I activate the “Data is confidential” option.

Welcome to the Make Community. We can help you solve problems here, but we cannot give this information. You’ll need to request it from Make themselves at https://www.make.com/en/ticket
That said, you can find some information here: https://www.make.com/en/security
And if you enable the ‘data is confidential’ information, the data is programmatically locked away. If enabled, there are very limited options to solve errors that occur in a scenario execution.

Yes, when you set Data Is Confidential, absolutely no log and business data is stored anywhere.
You can still see executions, their metrics and status, but nobody will be able to see the data that went though the automations, neither you, neither Make employees.
